And the cardamom adds a depth and sophistication that is surprising and rather fabulous. Plus thanks to the dates, it is very moist.
The sliced almonds look terrific sprinkled on the top of this cake, but don’t worry if you’ve only got walnuts – they work wonderfully, as well.
Makes: 1 square cake
70 g (2 1/2 oz) Butter, softened
200 g (7 oz) Brown sugar
1 cup Applesauce – or one raw apple, cored and blended with a little water
1 tsp Vanilla
3 med Eggs
250 g (9 oz) Plain flour
1 tsp Baking powder
1 tsp Bicarbonate of soda
1 tsp Ground cardamom
½ tsp Salt
½ tsp Cinnamon
¾ cup Dates, pitted and roughly chopped
For the baked topping
2 tbsp Butter
40 g (1 1/2 oz) Sliced almonds
3 tbsp Plain flour
3 tbsp Brown sugar
Preheat your oven to 160ºC (325ºF, Gas mark 3). Grease and line a square cake tin.
To make the cake, combine the butter, sugar, apples, vanilla, and eggs in a mixing bowl. Stir in the remaining ingredients, except the dates, until ingredients are mixed (some lumps are alright, as long as everything is combined). Fold in the dates and pour into your prepared cake pan.
For the topping (which is added before baking), place your butter in a medium (microwave-safe bowl) melt in the microwave; it should only need about 10-15 seconds. Add in the remaining ingredients. Mix together with your hands and, sprinkle over your cake.
Place the entire cake in the oven and bake for 35 minutes, until a toothpick inserted in the centre comes out clean. Allow to cool in the pan before slicing.
